This milk chocolate is crafted from a blend of CCN51 and ICS95 beans, sourced from the southern Pacific coast of Colombia. In Tumaco, farmers—once reliant on the low-quality "Big Chocolate" supply chain—have significantly improved their livelihoods. Since US craft chocolate makers began importing their cacao in 2011, their incomes have increased by 70%, thanks to the training and guidance they received from dedicated importers.
The cacao undergoes meticulous processing: box fermentation with close monitoring of temperature, pH, and sugar levels, followed by sun drying on raised beds under roofed protection. Mechanical dryers are used to ensure consistent results, and the beans are hand-sorted for perfection. The result is a smooth, creamy milk chocolate that honors its origins.
Small batch chocolate is best enjoyed at room temperature so the chocolate can quickly melt and coat your taste buds.
