This chocolate is made from Native Trinitario and Criollo beans from Santiago de Sisa, Peru. San Martin organic beans are grown in a mountainous area 300-900 meters above sea level that is home to various native communities.
ONLY ripe pods are harvest with the goal of created high quality beans that demand a higher selling price. This area has a history of growing coca use for illegal activities and this cacao can provide a sustainable alternative.
This cooperative purchases from 435 producers, of which 224 are women. San Martin produces 43% of the cacao in Peru. Peru is now one of the biggest exporters of organic cacao in the world but still only represents about 3% of the total global organic cacao crop.
