1. Start with Chaparral to give you a great baseline of cocoa, vanilla, and some notes of smokey oak.
2. Next up you'll want to try Dak Nong. Notice the raisin/fig notes and potentially a blackberry note. You'll also want to look out for some great molasses notes.
3. Finally, try Sambirano Valley Madagascar. We save this for last due to it's tendency to overwhelm your pallete. The first thing to note is the BRIGHT red berry notes. Depending on the harvest they may be brighter or browner but it's always there. Raspberry, strawberry, cherry. Some individuals also taste cinnamon or pepper.
